How to make a simple roast potato salad
The Roast Potato Salad, a staple at any dinner or Bbq. This is a very simple and basic roast potato salad that I have made here, but it has to be done right.
It dose not matter how you cook spuds or what kind they are , they have to be cooked properly.
There is no such thing as an al dente potato . Al dente means firm to the bit, just cooked, usually used around pasta cooking not potato cooking .
Depending on the size of potato, they will usually take up to 30 to 45 minuets in a 180 c/350f oven. The result you want is a creamy soft centre , with no crunchy or hard bits.
The simple things in life are great, a well cooked potato with a note of butter and a little seasoning is perfect.
Seasoning wise, potatoes are naturally bland so will take a lot of salt, seasoning , butter and cream.So season well, just keep tasting.
Flavour wise ,potatoes, like hard herbs like rosemary, thyme, parsley and sage, plenty of garlic also. Mint is also nice with hot buttery potato.
This simple salad is always good to go with a Sunday roast or even a Bbq along with a nice green salad.
With cooking I usually use unsalted butter for the fact that you can adjust and control the salt or balance of flavour.

Roast Potao Salad
Nicely roasted potato and garlic salad with rosemary and parsley.
- 2 kg Chat Potatoes
- 100 ml Vegetable Oil
- 1/2 bunch washed Rosemary leaves
- 3 tbsp Parsley sliced Italian Parsley
- 8 clove Garlic still in skin
- 150 gr Butter Unsalted
- Salt & Pepper To your taste
Make sure you roast potatoes properly. They should fell like a little bean bag once cooked.
