How to make Pumpkin Spinach Quinoa & Hommus Salad
When making this lovely pumpkin spinach quinoa & homes salad you might being asking yourself one question , Hummus or Hommus ,that is the question. I think it is Hummus but then western grammar got hold of it and turned it into Hommus. Either way, made properly it taste great .To get a Hummus dressing just keep adding olive oil and a little warm water so you get the right consistency .
Quinoa is one of those ancient wonder super foods that has been a staple of the poorer countries around the world for years and the last few years Western cultures have jumped on it and made enormously popular, and in turn pushing the price nearly past the point where the poorer countries can afford to buy.
It does taste lovely and quite filling.I usually roast my Quinoa in the pot before I add the liquid. I have a easy recipe to follow.
If you can’t find quinoa, you could substitute in your favourite cooked grain such as couscous, barley or brown rice. You’ll need to adjust the amount of water and cooking times though.

Quinoa Pumpkin Spinach & Hummus Salad
Healthy Vegetarian Quinoa spinach salad with a creamy hummus dressing .
- 2 cup Cooked Quinoa
- 500 gr Butternut Pumpkin pieces
- 2 Handful Baby Spinach
- 100 gr Slivered Almonds
- 150 gr Dried Berries Cranberries Raisins Blusberries
- 150 ml Hummus
- 125 gr Pumpkin Seeds
- 125 gr Goats Cheese
This a very easy salad to put together. The longest component is cooking the Quinoa which will take about 30 min, then on, its just throwing everything into a bowl and then eating .
