How to make a modern Italian Caprese salad.
Like many Italian inspired dishes this Italian Caprese salad is simple, tasty and has all the colours of the italian flag.
This is my version of Insalata Caprese , but Ive muscled it up into a larger salad with the addition of Rocket lettuce. Make sure you get red sun ripened tomato that are full of juice. If your tomatoes have a tinge of green on them ,leave on the window sill for a day .Fresh Mozzarella preferable buffalo, which is soft and creamy and fresh basil from your garden. I just use the leaves of basil as the stalk is very strong.
The Basil should be washed and leaves picked and sliced into very thin strips,this is called chiffonade. Please don’t be put off by culinary terms , just follow the simple instructions in the video.
Don’t forget a splash of balsamic , Virgin Olive oil dressing over your Italian Caprese Salad. Another easy to follow instructional video. Just put everything in a jar and give it a shake,docent fully emulsify the vinaigrette but enough to incorporate the flavours.
Seasoning of salt & pepper always enhances a simple salad like this.
This Italian Caprese Salad is a lovely share salad for four to six people, you could decrease the size and serve for one , it could fit on a side plate with a nice piece of roasted fish or if your having a Bbq you could double or triple the size and out on to a nice large platter.

Fresh, simple, Italian Salad dressed with a lovely homemade balsamic dressing.
- 3 each Ripe Vined Tomato
- 1/2 whole Red Onion
- 1 tub Buffalo Mozzarella
- 1/2 bunch Basil just leaves no stalks
- 1-2 handfuls Wild Rocket Lettuce
- 1 wedge Reggiano Parmesan Cheese
- 100 ml Balsamic dressing
Don't forget to season and taste as you construct the salad.
